Nam Ngiao dengan Shirataki Noodles, versi keto sup kari Thailand dengan babi giling, ceker dan darah babi dimasak pakai pasta kari harum.
Rendam bunga kapuk merah kering dalam air panas, lalu bilas. Tidak perlu direbus atau direndam semalaman karena pressure cooker akan membuatnya empuk.
Soak the dried red silk cotton flowers in hot water, then give them a good rinse. There's no need to boil them or soak them overnight, as the pressure cooker will ensure they become tender.
Potong darah babi dan rebus hingga matang. Siapkan topping lainnya.
Cut the pork blood into bite-sized pieces and boil them until they are fully cooked. While they're cooking, prepare the other toppings.
Goreng cabai kering, lalu gunakan sisa minyak untuk menumis pasta kari hingga harum. Tambahkan daging babi giling, bumbui, lalu tuang air.
Fry the dried chilies. Once done, use the same oil to sauté the curry paste until it becomes fragrant. Add the ground pork, season it, and then pour in water.
Masukkan semua bahan kecuali topping ke dalam pressure cooker.
Place all the ingredients, except for the made toppings, into the pressure cooker.
Setelah matang, sajikan dengan topping yang sudah disiapkan.
Once the pressure cooker cycle is complete, serve the Nam Ngiao with the made toppings.
Anak saya menikmatinya dengan bihun dan tanpa sayuran, sementara saya memakannya dengan shirataki noodles. Resep ini tidak menambahkan darah segar ke dalam sup.
A personal note: my son prefers this dish with rice noodles and no vegetables, while I enjoy it with shirataki noodles. Also, this particular recipe does not include fresh blood in the soup.
