To prepare the sauce, combine the soy sauce, hot honey, chili flakes, oyster sauce, and smashed garlic in a bowl. Set this mixture aside.

Prepare the salmon by patting it as dry as possible, then sprinkling salt and pepper onto the flesh.
將三文魚均勻裹上麵粉,抖去多餘麵粉。
Completely coat the salmon in flour, then gently dust off any excess.
在鑊中以中大火加熱牛油果油,魚皮面朝下放入三文魚,蓋蓋煎約 2 分鐘或至略微金黃。
Heat avocado oil in a pan over medium-high heat. Place the salmon in the pan, skin-side down, and cover. Cook for 2 minutes, or until the skin is slightly golden.
翻面再煎 2 分鐘,然後取出備用。
Flip the salmon and cook for an additional 2 minutes. Remove it from the heat and set it aside.
將醬汁直接倒入鑊中煮至冒泡,放回半熟的三文魚,在醬汁中再煮 3 分鐘。
Pour the made sauce directly into the pan and heat until it begins to bubble. Return the partially cooked salmon to the pan. Continue cooking the salmon in the sauce for another 3 minutes.

In a separate bowl, combine the 1/2 cup water with the potato starch to create a slurry (ensure the water is not hot). Add this slurry to the sauce in the pan. Continue heating for an additional 2 minutes.

Serve the salmon with the hot honey sauce spooned over it, ideally on a bed of rice. Enjoy your meal!
