南娘湯配蒟蒻麵以免治豬肉、雞腳同豬紅入高壓煲,配香辣咖喱醬,生酮版改用蒟蒻麵。
將乾紅木棉花用熱水浸泡,然後沖洗。唔需要煮滾或浸過夜,因為高壓煲會將佢哋煮腍。
Soak the dried red silk cotton flowers in hot water, then give them a good rinse. There's no need to boil them or soak them overnight, as the pressure cooker will ensure they become tender.
將豬紅切件,煮至熟透。準備其他配料。
Cut the pork blood into bite-sized pieces and boil them until they are fully cooked. While they're cooking, prepare the other toppings.
炸乾辣椒,然後用餘油炒香咖喱醬。加入免治豬肉調味,然後加水。
Fry the dried chilies. Once done, use the same oil to sauté the curry paste until it becomes fragrant. Add the ground pork, season it, and then pour in water.
除配料外,將所有材料放入高壓煲。
Place all the ingredients, except for the made toppings, into the pressure cooker.
煮好後,配上已準備好嘅配料上桌。
Once the pressure cooker cycle is complete, serve the Nam Ngiao with the made toppings.
我個仔鍾意配米粉、唔要蔬菜咁食,而我就配蒟蒻麵。呢個食譜唔加鮮血落湯。
A personal note: my son prefers this dish with rice noodles and no vegetables, while I enjoy it with shirataki noodles. Also, this particular recipe does not include fresh blood in the soup.
