青木瓜酸辣咖哩配野蔬炒蛋,青木瓜同紅蘿蔔以辣椒乾蔥醬煮,用羅望子同魚露調味,伴野蔬煎蛋。
將所有咖哩醬材料放入攪拌機,素食者用素蝦膏。加入1杯清水(1/4公升)攪拌至滑順,倒入鍋中,加入餘下的水至共4又1/4杯(1公升),煮至沸騰。
Combine all the curry paste ingredients in a blender. If you're preparing a vegetarian version, make sure to use vegetarian shrimp paste. Add 1 cup (1/4 liter) of water and blend until the mixture is completely smooth. Transfer this paste to a pot, then add the remaining water, bringing the total volume to 4 1/4 cups (1 liter), and bring it to a boil.
加入魚乾粉代替新鮮魚肉(素食者省略)。如想湯更稠,可將菇柄與咖哩醬一起攪拌。加入切片青木瓜、紅蘿蔔及其他喜歡的蔬菜。
Stir in the dried fish powder; this is used as an alternative to pounded fresh fish. Vegetarians should omit the fish powder entirely. For those who prefer a thicker soup, consider blending mushroom stems along with the curry paste in the initial step. Now, add the sliced green papaya, carrot, and any other vegetables you've chosen. If your carrots are organic or have been well cleaned, you can leave their skin on to boost the nutritional content.
用羅望子汁、魚露和棕櫚糖調味,攪拌均勻。如想增強免疫力,可加入薑黃粉。
Season the soup with tamarind juice, fish sauce, and palm sugar, then stir everything well. For an added immunity boost, you can include turmeric powder if desired. Be aware that its flavor will be mild, so feel free to skip it if it's not to your preference.
放入野蔬炒蛋,等待湯滾蔬菜熟透,上碟即可。
Add the omelet with pak wan leaves. Allow the soup to return to a boil and ensure the vegetables are cooked through before transferring the curry to a serving dish.
傳統上可用金合歡葉炒蛋,但今次我用了自家花園的野蔬葉。
While an omelet with cha-om (acacia leaves) is traditionally used, I opted for an omelet made with pak wan leaves from my garden for this particular recipe.
