苦瓜炒蛋先將苦瓜片焯水減苦,再同調味蛋液及蝦米煎至兩面金黃,清香惹味。
苦瓜洗淨去籽,切薄片。用少許鹽略醃至軟身。放入滾水中焯水,撈起,待不太熱時榨乾水分,備用。
Rinse the bitter melon, remove the seeds and slice thinly. Lightly salt and leave until softened. Blanch in boiling water, drain, and once cool enough, squeeze out the water. Set aside.
雞蛋打散後,加入調味料拌勻成蛋汁,待用。
Beat the eggs, then stir in the seasoning to make an egg mixture. Set aside.
燒熱油約3湯匙,爆香薑蓉及蝦米(如果加的話),加入苦瓜片炒透,澆酒,倒入蛋汁,以中火把材料煎至兩面金黃及熟。上碟,趁熱享用。
Heat about 3 tbsp of oil and saute the minced ginger and dried shrimp (if using) until aromatic. Add the bitter melon slices and stir-fry through, splash in some wine, then pour in the egg mixture. Pan-fry over medium heat until both sides are golden and cooked. Plate and serve hot.
