蒜香蝦滑貝貝蒸粉絲,每隻沙白釀滿蝦滑,鋪喺粉絲上,淋上蒜蓉辣椒蠔油汁,鮮味十足。
沙白浸泡鹽水吐沙洗淨,煮至沙白開口撈出。
Soak the sand clams in salted water to purge sand, rinse clean, then cook until they open and remove.
起熱油鑊,倒入蒜蓉、辣椒粒、生抽、蠔油、糖炒成醬汁。
Heat a wok with oil and stir-fry the minced garlic, diced chilli, light soy sauce, oyster sauce and sugar into a sauce.
將蝦滑與紅蘿蔔粒拌勻,釀入沙白。
Mix the shrimp paste with the diced carrot and stuff it into the clams.
排靚蝦滑貝貝,中間放入泡軟嘅粉絲,舖上醬汁後蒸 10 分鐘,最後撒上蔥花。
Arrange the stuffed clams neatly, place the softened vermicelli in the centre, spread the sauce on top and steam for 10 minutes, then finish with chopped spring onion.
