牛奶小饅頭以薯仔生粉、全脂奶粉和低筋麪粉搓成小圓球,焗成入口鬆化的一口小點心。
把雞蛋打入碗中拌勻。
Crack the egg into a bowl and beat until combined.
篩入糖粉拌勻,直至糖粉溶化。
Sift in the icing sugar and stir until it dissolves.
加入粟米油拌勻。
Add the corn oil and stir until combined.
把泡打粉、低筋麪粉和奶粉篩入蛋液中。
Sift the baking powder, cake flour and milk powder into the egg mixture.
再把薯仔生粉篩入蛋液中。
Then sift the potato starch into the egg mixture.
用刮刀翻拌至出現絮狀。
Fold with a spatula until it forms flaky crumbs.
用手把材料搓成不乾不濕的麪糰。
Bring it together by hand into a dough that is neither dry nor sticky.
把麪糰搓成長條,用刮板平均分成小劑子。
Roll the dough into a rope and cut it into small pieces with a dough scraper.
用手把小劑子搓成小圓球,儘量大小一致。
Roll each piece into a small ball by hand, keeping them as even in size as possible.
焗盤鋪上牛油紙,把小球排放在上面。
Line a baking tray with parchment and arrange the balls on it.
放入已預熱的焗爐,以上下火150度焗15分鐘。
Bake in a preheated oven at 150C, top and bottom heat, for 15 minutes.
