懷念三文魚以氣炸三文魚排配上越式醬汁,番茄、蒜頭、魚露及泰國指天椒慢煮收稠,鮮香惹味。
處理魚:用鹽清洗魚後用水沖洗,拍乾,兩面略為用海鹽和黑胡椒粉調味。
Fish Preparation: Clean the fish with salt, then rinse it well with water. Pat the fish dry before lightly seasoning both sides with sea salt and ground black pepper.
在魚的兩面和魚皮噴上食用油。在氣炸鍋底部鋪鋁箔紙,以198°C氣炸20至25分鐘(無需翻面)至金黃色。
Spray both sides of the salmon, including the skin, with neutral oil. Cook it in an air fryer at 390°F for 20-25 minutes, or until golden. Place foil on the bottom of the air fryer basket; there's no need to flip the fish during cooking.
三文魚烹調期間製作醬汁:炒香蒜頭、乾蔥和白洋蔥至洋蔥透明。加入番茄粒、糖、魚露和黑胡椒粉。
Sauce Preparation: While the salmon is cooking, prepare the sauce. Sauté the minced garlic, minced shallots, and diced white onions in 2 tablespoons of neutral oil until the onions become translucent. Add the diced Roma tomatoes, sugar, fish sauce, and 1 teaspoon of ground black pepper.
炒4至5分鐘,蓋上鍋蓋以小火燜3分鐘。
Sauté this mixture for 4-5 minutes. Cover the pan with a lid and let it simmer on low heat for 3 minutes.
加入青蔥和幾條整根泰國指天椒(想要辣可以切碎)。翻炒均勻,開蓋繼續煮2分鐘至醬汁收稠。試味調整。
Add the chopped green onions and a couple of whole Thai chilies (remember, you can mince the chilies if you prefer a spicier sauce). Toss everything evenly, then let the sauce simmer uncovered for 2 minutes, or until it has reduced to your desired consistency. Taste the sauce and adjust the seasonings as needed.
將醬汁倒在碟上,再放上煮好的三文魚。享用!
Spoon the sauce onto a plate, then place the cooked salmon on top. Serve immediately and enjoy!
