清蒸魚將魚身別刀抹鹽料酒醃過清蒸,鋪上蔥絲、薑絲,淋上蒸魚豉油同滾油即成。
在魚身兩面各別幾刀,均勻抹上鹽和料酒,放上幾片薑,醃 10 分鐘。
Score the fish on both sides, rub evenly with salt and cooking wine, add a few ginger slices and marinate for 10 minutes.
將醃好的魚放在碟上,放入蒸鍋,蒸 15 分鐘。
Place the marinated fish on a plate, put it in the steamer and steam for 15 minutes.
蒸好的魚取出後,鋪上蔥絲、薑絲,淋上蒸魚豉油。
Remove the steamed fish, top with shredded spring onion and ginger, and drizzle with steamed fish soy sauce.
燒熱一湯匙油,淋在魚身上即可。
Heat a spoonful of oil until smoking and pour it over the fish.
