菜心炒牛肉先焯菜心,再爆香薑蒜炒醃好的牛肉片,最後拌入芡汁,鮮嫩入味。
菜心洗淨,薑切片,蒜頭切粒,準備好芡汁,牛肉片用醃料醃好。
Wash the choy sum, slice the ginger, mince the garlic, prepare the sauce, and marinate the sliced beef.
水煮滾後,加入 1 茶匙雞粉和糖,焯約 1 分鐘後撈起備用。
Bring water to a boil, add 1 tsp chicken powder and the sugar, blanch the choy sum for about 1 minute, then remove and set aside.
鑊中加油燒熱後,加入蒜粒和薑片爆香。
Heat oil in a wok and stir-fry the garlic and ginger until fragrant.
加入醃好的牛肉片,炒至約八成熟。
Add the marinated beef slices and stir-fry until about 80% cooked.
再加入菜心炒至所有食材均勻後,加入芡汁及少許鹽調味。
Add the choy sum and stir-fry until everything is evenly combined, then add the sauce and a little salt to season.
