薄切牛肉以薑絲、蠔油、生抽及胡椒粉醃過,鋪在絲瓜上蒸至嫩滑,最後撒上蔥花。
牛肉洗淨,切薄片。加入薑絲、蠔油、生抽、鹽、胡椒粉,分次少量加水抓勻,再加生粉抓勻,最後用沙律油鎖住水分。
Rinse the beef and slice thinly. Add shredded ginger, oyster sauce, light soy sauce, salt and white pepper. Add a little water at a time and mix by hand, then add cornstarch and mix again. Finally seal in the moisture with salad oil.
絲瓜去皮,洗淨切厚片,用鹽水浸一浸。
Peel the loofah, rinse, cut into thick slices and soak briefly in salted water.
碟上鋪絲瓜,將肉片逐片平鋪在絲瓜上,上鑊蒸 8 至 10 分鐘。
Arrange the loofah on a plate, lay the beef slices flat over it one by one, and steam for 8 to 10 minutes.
取出,撒上蔥花即成。
Remove from the steamer and sprinkle with chopped spring onion.
