蒜香蝦滑貝貝蒸粉絲將蝦滑紅蘿蔔釀入沙白,鋪上粉絲,淋上蒜蓉辣椒蠔油醬同蒸,鮮味十足。
沙白浸鹽水吐沙洗淨,煮至開口撈出。
Soak the clams in salted water to purge sand, rinse clean, then cook until they open and scoop them out.
起熱油鑊,倒入蒜蓉、辣椒粒、生抽、蠔油、糖炒成醬汁。
Heat oil in a wok, add the minced garlic, diced chilli, light soy sauce, oyster sauce and sugar, and stir-fry into a sauce.
將蝦滑與紅蘿蔔粒拌勻,釀入沙白。
Mix the shrimp paste with the diced carrot and stuff the mixture into the clams.
排靚蝦滑貝貝,中間放入泡軟的粉絲,舖上醬汁後蒸 10 分鐘,最後撒上蔥花。
Arrange the stuffed clams neatly, place the softened vermicelli in the centre, spread the sauce over them and steam for 10 minutes. Finish with chopped spring onion.
