港式茄子煮肉碎先炒香醃過的免治豬肉和蒜頭,加入茄子炒至軟身,再以蠔油和紹興酒燜煮收汁。
切好蒜頭和蔥花。

將買回來的瘦肉先切片,再切條,然後剁肉碎,加入醃料醃至少半小時。

先將豬肉炒至半熟,盛起備用。

炒香蒜頭,加入茄子炒至軟身,加入鹽糖和紹興酒,炒勻。

醬汁煮到收乾至理想的稠度即可。
