小熊漢堡以黑麥牛奶麪糰焗成,加入甘筍粉和肉鬆,做成小熊耳朵造型,中間夾入雞肉、青瓜、生菜和芝士。
將高筋麪粉、黑麥麪粉、糖、蛋液、鹽、酵母、水、肉鬆和甘筍粉放入麪包機揉十分鐘,加入軟化牛油再揉10至20分鐘;夏天液體最好先冷藏。
Put the bread flour, rye flour, sugar, beaten egg, salt, yeast, water, pork floss and carrot powder into a bread machine and knead for 10 minutes, then add the softened butter and knead another 10 to 20 minutes; in summer, chill the liquid first.
取出麪糰分成兩份,其中一份50克,另一大份麪糰要稱重。
Take out the dough and divide it into two portions, one weighing 50g and the other a larger portion, weighed on a scale.
把大份麪糰平均分成12份,每份約50克。
Divide the large portion of dough evenly into 12 pieces, about 50g each.
將麪糰搓圓放入模具,中途蓋上保鮮紙以免風乾。
Roll each piece of dough into a ball and place it in the mould, covering with plastic wrap in between to stop it drying out.
把之前分出的那份麪糰,每個5克分成24份,用作小熊的耳朵。
From the piece of dough set aside earlier, divide it into 24 pieces of 5g each to make the bears' ears.
在接口處塗少許水黏合,耳朵最好靠模具邊緣擱住,否則發酵時會被擠壓變形;麪糰不要放正中間,稍稍靠邊,讓耳朵可以擱在模具邊緣。
Brush a little water where they join to stick them on; rest the ears against the top edge of the mould, or fermentation will squash them out of shape. Place the dough slightly off-centre so the ears can rest on the rim of the mould.
在焗爐內放一盆熱水幫助發酵,若焗爐有發酵功能可開發酵模式。
Place a bowl of hot water in the oven to help it prove; if your oven has a proving setting, use it.
發酵至兩倍大,把麪包取出,焗爐預熱180度;取出時注意保護表面以免風乾。
Let it prove until doubled in size, take the buns out and preheat the oven to 180C; protect the surface as you remove them so they don't dry out.
預熱完成後把麪包放入焗爐。
Once preheated, put the buns into the oven.
焗約10分鐘表面上色後蓋上錫紙再焗10分鐘,即180度共焗20分鐘便熟;請自行按焗爐調整時間和温度。
Bake for about 10 minutes until the surface colours, then cover with foil and bake another 10 minutes; that is 20 minutes at 180C in total, adjusting the time and temperature to your own oven.
雞胸肉切薄片煎熟備用。
Slice the chicken breast thinly, pan-fry until cooked and set aside.
各種蔬菜切片,如青瓜、番茄、生菜等。
Slice the vegetables, such as cucumber, tomato and lettuce.
用裱花嘴在芝士片上壓出圓片。
Punch out small rounds from the cheese slices with a piping tip.
用食用色素筆、朱古力或黑芝麻醬畫出小熊的嘴巴和眼睛。
Draw the bears' mouths and eyes with a food colouring pen, chocolate or black sesame paste.
中間夾入生菜、雞肉、青瓜和芝士片等即可。
Fill the middle with lettuce, chicken, cucumber and cheese slices, and they are ready.
