青醬薯仔豬扒以墨西哥綠番茄、塞拉諾辣椒同芫荽打成莎莎醬,連薯仔燜煮豬扒至軟腍。
喺煲入面將莎莎醬材料煮滾。
To begin, boil the ingredients for your salsa in a pot.
鑊中燒熱油。可以先炒香洋蔥同蒜頭增加香味。油熱後加入豬扒。如果喜歡,可以事先用調味料乾醃豬扒,例如蒜鹽或牛至。
Heat some oil in a pan. For added flavor, you have the option to sauté some onion and garlic in the hot oil. Once the pan is hot, place the pork chops in. If you wish, you can dry rub your pork chops beforehand with seasonings like garlic salt or oregano.
每個薯仔切成6至8件,唔好切得太細。
Chop the potatoes into 6 to 8 pieces each; make sure they are not too small.
將莎莎醬材料加少少滾水打勻,唔好太多水,唔想太稀。然後倒入豬扒鑊中。我會加約2湯匙醋。
Now, blend your salsa ingredients. Use a little bit of the boiling water from earlier, but be careful not to add too much, as you don't want the salsa to be too watery. Pour the blended salsa over the pork chops. I personally add about 2 tablespoons of vinegar at this point.
加入薯仔,蓋上蓋燜約兩小時或至豬肉軟腍。我用壓力煲中大火煮40分鐘,效果完美。
Add the chopped potatoes and cover the pot. Let it cook for about two hours, or until the pork becomes tender. As a tip, I found that using a pressure cooker on medium-high for 40 minutes worked perfectly.
