北菇蒸雞將雞髀用蠔油、冰糖醃味,鋪上浸軟冬菇同蔥段,隔水蒸熟,鮮味十足。
雞髀斬細件,洗淨瀝乾,加入所有調味料醃約30分鐘,再加入生粉拌勻;冬菇浸軟去蒂;蔥洗淨切段備用。
Chop the chicken thigh into small pieces, rinse and drain. Add all the seasoning and marinate for about 30 minutes, then mix in the cornstarch. Soak the dried shiitake until soft and remove the stems. Rinse the spring onion and cut into sections.
將醃好的雞件、冬菇及蔥白平鋪於深碟中,放入電飯煲,外鍋加2杯水,隔水蒸約25分鐘,跳掣後加入蔥綠,再焗5分鐘即成。
Spread the marinated chicken, shiitake mushrooms and white parts of the spring onion in a deep plate. Place in a rice cooker with 2 cups of water and steam for about 25 minutes. When it switches to keep-warm, add the green parts of the spring onion and let it sit covered for 5 more minutes.
