苦瓜炒牛肉先焯苦瓜,再以蒜蓉豆豉醬爆香,與醃好的牛肉同炒,加片糖埋薄獻。
苦瓜洗淨,去囊,切片。用鹽醃片刻,放入滾水中焯水,撈起備用。
Wash the bitter melon, remove the pith and slice. Salt briefly, then blanch in boiling water, drain and set aside.
牛肉洗淨,橫紋切薄片。用醃料拌勻,醃約十分鐘待用。
Wash the beef and slice thinly against the grain. Mix with the marinade and marinate for about ten minutes.
燒熱油鑊,放入牛肉炒至8成熟,取出放一邊。
Stir-fry the beef in a heated oiled wok until about 80% cooked, then remove and set aside.
燒熱油鑊,放下新鮮蒜蓉和蒜蓉豆豉醬,炒至香味四溢。加入苦瓜炒透,加清水和片糖煮片刻。苦瓜稔身後,下調味料埋薄獻。上碟供食。
Heat the oiled wok, add the fresh minced garlic and the garlic black bean sauce, and stir-fry until very fragrant. Add the bitter melon and stir-fry through, then add water and slab sugar and cook briefly. Once the bitter melon is tender, add the seasoning to thicken into a light glaze. Plate and serve.
