粟米肉碎粥將白米煲成粥,再拌入粟米湯、蠔油醃過的免治豬肉及蛋黃,灑上蔥粒。
先將免治豬肉用蠔油及胡椒粉醃好,放入雪櫃。
Marinate the ground pork with oyster sauce and white pepper, then refrigerate.
白米洗淨,瀝乾水分,加少許生油,拌勻放在一旁備用。
Rinse the rice, drain well, add a little oil, mix evenly and set aside.
將 3 碗清水倒入煲內煲滾,加入白米,攪勻以免黐底,轉中小火慢慢煲。
Bring 3 bowls of water to a boil, add the rice and stir to prevent sticking. Lower to medium-low heat and simmer slowly.
將粟米湯罐頭倒入乾淨碗內,用空罐裝一碗清水搖勻,倒入碗中與粟米湯拌勻,備用。
Pour the canned corn soup into a clean bowl. Fill the empty can with one bowl of water, swirl, and mix it into the corn soup. Set aside.
粥再滾起後加入粟米湯及醃好的免治豬肉,不停攪勻至完全融合。放入 2 個蛋黃,加入 1 茶匙鹽及胡椒粉,再次拌勻。開大火再滾起即可熄火試味,倒入碗內,加上蔥粒及胡椒粉即成。
When the congee boils again, add the corn soup and the marinated pork, stirring constantly until fully combined. Add the 2 egg yolks, 1 tsp salt and white pepper, mix again. Bring back to a boil over high heat, then turn off the heat and taste. Serve in bowls topped with chopped spring onion and white pepper.
