青瓜拌米線以石臼搗辣椒、番茄、青檸同醃魚汁,再拌入青瓜同米粉,泰式涼拌惹味。
將辣椒放入石臼,加少許味精防止搗碎時飛濺。
Put the chilies in a mortar and pestle. Sprinkle in a small amount of MSG; this helps to prevent splattering as you pound the chilies.
加入番茄、青檸、羅望子汁、醃魚汁和醃蒜汁,全部搗拌均勻。
Add the tomatoes, lime, tamarind juice, fermented fish sauce, and pickled garlic brine. Pound all these ingredients together until they are well combined.
青瓜切碎後加入石臼。
Chop the cucumbers and then add them to the mortar. You have the option to chop them on a plate beforehand or directly in the mortar, depending on your preference.
加入米粉,充分拌勻,轉到碟子上供應。可配新鮮蔬菜和豬皮享用!
Add the rice vermicelli noodles and stir everything together well. Transfer the mixture to a plate and serve. This dish is best enjoyed with fresh vegetables and pork rinds!
