BBQ Smoky Pork with Salted Rice coats pork chops in a homemade smoky paprika, thyme and tomato spice rub, then bakes them with salted rice.
First, trim any excess fat from the pork. Season the pork with salt and pepper. In a separate bowl, combine all the herbs, spices, and purees. Stir these ingredients together, then add the water to thin the sauce to your desired consistency.

Generously coat the pork with the homemade sauce. Place the coated pork in a preheated oven at Gas Mark 7 for about 26 minutes.

While the pork is cooking, place your rice in a large pan with plenty of water. Add a pinch of salt to the water.

After the pork has been in the oven for 15 minutes, carefully remove it, stir, and then cover it with foil. Return it to the oven and continue cooking until it's fully done. Once cooked, remove the foil and let the pork rest for 2 minutes. Serve it alongside your rice, which should also be ready by then.
