Fillet mignon with spicy shrimp pairs butter-basted steak with Cajun shrimp and creamy scalloped baby potatoes, finished with green beans and lemon.
Bring enough water to a boil in a saucepan to cover the green beans. Once boiling, reduce the heat and cook the green beans until they are slightly soft, then drain them and set aside.

For the Scalloped Potatoes:

Pat the sliced potatoes dry and season them with salt and pepper.

In a skillet, heat butter over medium-high heat until it foams. Add the potatoes and sauté them. Drizzle in olive oil and continue cooking.
喺平鑊入面以中大火熱鑊,加入牛油煮至起泡。放入薯仔炒勻,淋入橄欖油繼續煮。
Pour in 3/4 of the heavy cream and continue stirring. Once the mixture begins to thicken, reduce the heat to medium and add the white wine. Stir again, then lower the heat to a simmer.
加入 3/4 嘅濃鮮忌廉繼續攪拌,待醬汁變稠後調低至中火,加入白酒再攪勻,最後調至細火。
For the Shrimp and Steak:
處理大蝦同牛扒:
Pat the shrimp and steaks dry with paper towels. In a bowl, combine the shrimp seasoning ingredients (1 tsp salt, 1 tsp pepper, 2 tbsp Cajun seasoning, 2 tbsp smoked paprika) and stir until evenly mixed. Season the steaks with salt and pepper.
用廚房紙印乾大蝦同牛扒。將大蝦調味料放碗入面混合均勻。牛扒加鹽同黑椒調味。
Heat two skillets over medium-high heat. Once hot, add butter to one skillet and olive oil to the other.

In the skillet with butter, add the shrimp and cook for about three minutes, then flip them. At the same time, place the fillets and garlic in the other skillet and sear for the same duration, then flip them. Add butter to the skillet with the fillets to baste them.
喺有牛油嘅鑊入面放入大蝦,煮約 3 分鐘後翻面。同一時間,喺另一個鑊入面放入菲力同蒜頭,同樣煎 3 分鐘後翻面。加入牛油不斷淋油澆喺菲力上面。
Continue cooking the shrimp until they are nicely pink and seasoned. Add the cooked shrimp to the scalloped potatoes, along with the green beans. Pour in the remaining heavy cream and stir everything together.
繼續煮大蝦直至呈漂亮粉紅色,調味後加入焗薯仔,放入四季豆。加入剩餘嘅濃鮮忌廉拌勻。
Once the fillets are seared to your desired doneness (after flipping, cook for about 2 minutes for rare, 3 minutes for medium-rare, 4 minutes for medium, etc.), remove them from the skillet and let them rest for an equal amount of time.
翻面後按個人喜好煎至合適熟度(2 分鐘一成熟、3 分鐘三成熟、4 分鐘五成熟等),從鑊入面取出,靜置同等時間。
To serve, scoop the shrimp and potatoes onto a plate. Add the green beans (aim for roughly 5 shrimp and green beans per plate). Squeeze lemon juice over the shrimp and potatoes. Slice each fillet in half and arrange on the plate. Garnish with mint.
喺碟上舀出大蝦同薯仔,放上四季豆(每碟約 5 隻大蝦)。將檸檬汁擠喺大蝦同薯仔上面。將菲力切半放上碟,最後以薄荷葉裝飾。
