Steamed pork ribs rest on sweet pumpkin slices and soak up a garlic and fermented black bean marinade, topped with spring onion.
Wash the ribs — I scrub them twice with cornstarch then rinse clean with water.
洗乾淨排骨,我會用生粉搓洗兩次,再用清水沖乾淨。
Peel and deseed the pumpkin, wash it, and slice into thin pieces (about 1 cm thick). Cut thicker if you prefer more bite.
南瓜去皮去囊,洗乾淨,切成薄片(約1厘米厚),喜歡有口感的可以切厚一點。
Finely chop the garlic and black beans, add all the seasonings, and mix well. Marinate for at least 30 minutes.
將蒜頭和豆豉切碎,再加入所有調味料,拌勻。醃至少半小時。
Lay the pumpkin slices flat on a plate, then arrange the ribs on top of the pumpkin, keeping the meat as flat as possible without overlapping.
將南瓜平鋪在碟中,排骨鋪在南瓜上,肉盡量不要重疊。
Steam for 10 minutes after the water boils. Sprinkle with chopped spring onion before serving.
水滾後蒸10分鐘即可,進食前灑上蔥花。
Cook's note: I cut my pumpkin quite thin and steamed it for 15 minutes — it came out a little mushy and hard to pick up with chopsticks. If you want pumpkin with more bite, around 10 minutes of steaming should do. The seasoning I used came out not too heavy; if you prefer stronger flavour, adjust the amounts to your taste.
煮後感:我的南瓜切得比較薄,蒸了15分鐘,南瓜有點爛,用筷子就比較難夾起。如果大家想食有口感的南瓜,建議蒸大概10分鐘就可以了。另外我的調味出來的效果是不算太濃味,如果喜歡吃重口味的朋友,可以自行調教調味料的份量。
