Pad See Ew stir-fries wide rice noodles in dark soy with marinated pork, egg, cabbage, carrot, and Chinese broccoli for a smoky, savoury Thai classic.
Toss the wide rice noodles with the dark soy sauce until they are evenly coated. Set them aside for now.
將闊粿條同老抽豉油拌勻,確保粿條均勻上色,然後備用。
Heat the oil in a wok or a large skillet. Add the minced garlic and stir-fry until it becomes fragrant. Add the marinated pork and cook it until it's done. Crack in the eggs and scramble them with the pork until they are fully cooked.
喺鑊或大平底鑊中燒熱食油。加入切碎蒜頭炒香。放入醃製豬肉炒至熟透。打入雞蛋同鴨蛋,同豬肉一齊炒熟。
Add the soy sauce-coated noodles and stir-fry to combine everything. Add the Chinese broccoli, cabbage, and carrot. Continue to stir-fry until all ingredients are well mixed and the vegetables are just tender.
加入已沾上豉油嘅粿條,炒勻。放入芥蘭、椰菜同紅蘿蔔,繼續炒至所有材料混合均勻,蔬菜剛剛變軟即可。
Season the dish with the seasoning powder, sugar, ground black pepper, soy sauce, and oyster sauce. Stir-fry again to ensure everything is well combined. Taste and adjust the seasoning to your preference. Remove from heat and serve immediately on a plate.
