Steamed Tofu with Mud Carp tops soft tofu with fish paste mixed with sweet corn and coriander, steamed and finished with hot oil and soy sauce.
Pat the tofu dry, cut into pieces and arrange on a plate. Finely chop the coriander.
豆腐印乾水分，切件鋪在碟上，芫荽切碎。
Mix the mud carp paste with the corn and coriander until combined.
鯪魚肉加入粟米及芫荽拌勻。
Dampen a spoon with water to stop sticking, place small portions of the fish paste over the tofu, steam over high heat for 7 minutes, then finish with hot oil and soy sauce.
匙羹先沾濕水以防太黏，將鯪魚肉分小份鋪在豆腐上，大火蒸 7 分鐘，最後淋上熟油及豉油。
