Stir-fried chicken liver with spring onion uses soaked, sliced liver marinated in vegetarian oyster sauce, braised briefly with ginger.
Soak chicken livers in clean water until the blood drains out; change the water when it becomes cloudy and repeat until clear. Use kitchen scissors to remove the connective tissue, then slice. Add cooking wine and vegetarian oyster sauce and mix well.
