Taiwanese home-style stir-fried noodles toss blanched wheat noodles with marinated pork, cabbage, shiitake and dried shrimp in a savoury soy sauce.
Prepare all ingredients, trim and wash.

Soak the dried shiitake mushrooms in cold water for about 15 minutes until softened.

Bring 1.5 litres of water to a boil over medium heat. Blanch the noodles for about 40 seconds until softened and separated, then drain.

Add the soy sauce from the seasoning, stir-fry to develop the sauce aroma, then add the salt, black pepper, and water. Bring to a boil.

Reduce to low heat, add the blanched noodles from step 5, and toss to combine evenly.

Add the spring onion sections, toss everything together, turn off the heat, and plate.
