薯仔絲炒香後拌入蛋液,加鹽及黑胡椒煎至兩面金黃,只需兩樣主料。
先將薯仔去皮切成絲。
Peel the potato and cut into shreds.
發打雞蛋加入鹽及黑胡椒調味。
Beat the eggs and season with salt and black pepper.
熱油鑊,將薯仔絲炒熟(約4-5分鐘),蛋液倒入鑊中,用鑊鏟鋪平整形,小火煎約1分鐘左右,翻面繼續煎1分鐘左右,兩面都煎到金黃即可(翻面時可用一個大碟蓋在鑊上反轉鑊,蛋餅就鋪在碟子上,再將蛋餅回鑊煎)。
Heat oil in a wok and stir-fry the potato shreds until cooked (about 4-5 minutes). Pour in the egg, spread flat with a spatula, and fry over low heat for about 1 minute, then flip and fry for another minute until both sides are golden. (To flip, cover the wok with a large plate, invert, then slide the omelette back in.)
