碎蛋三文治以烚蛋拌入蛋黃醬、鹽及粗黑胡椒,鋪在烘香的麥方包上。
雞蛋放入冷水中煮7至8分鐘至熟,取出放入冷水浸3分鐘。
Put the eggs in cold water and boil for 7-8 minutes until cooked, then transfer to cold water for 3 minutes.
雞蛋去殼剖半,將蛋黃挖出。
Peel the eggs, halve them and scoop out the yolks.
蛋黃趁微温用叉子壓碎壓散,混入鹽和粗黑胡椒粉拌勻入味;蛋白切碎後連同蛋黃醬一同拌勻。
While the yolks are still warm, mash them with a fork and mix in the salt and coarse black pepper. Chop the egg whites and combine with the mayonnaise until evenly mixed.
方包放入焗爐略烘,待牛油溶化後取出,放上碎蛋沙律即可。
Toast the bread lightly in the oven until the butter melts, take it out and top with the egg salad.
