五彩茄條將茄子炒軟,配豆瓣醬炒香免治豬肉,面層鋪上葱、芫荽、蒜末同紅辣椒。
將適量料酒加入豬肉餡中。
Add a splash of cooking wine to the ground pork.
根據個人喜好加入薑末。
Add minced ginger to taste.
拌勻後,將肉餡醃製10分鐘。
Mix well and marinate for 10 minutes.
在平底鍋中倒入適量食用油,待油燒至七成熱時,放入茄子條煸炒。待茄子變軟後,即可盛出備用。
Pour oil into a flat pan and heat until very hot (about 70%). Add the aubergine strips and stir-fry until soft, then transfer to a plate and set aside.
鍋中保留少許底油,再放入醃製好的肉餡,煸炒至其變色。
Leave a little oil in the pan. Add the ground pork and stir-fry until it changes colour.
依據個人口味加入適量的豆瓣醬。
Add broad-bean chilli paste to taste.
將豆瓣醬與肉末充分混合翻炒均勻後,盛出備用。
Stir-fry with the pork until well combined, then transfer to a plate and set aside.
將炒好的茄子條擺入盤中。依次將切好的葱末、香菜末、炒好的肉末、蒜末以及小紅辣椒碎均勻地鋪在茄子條上,即可。
Arrange the stir-fried aubergine on a plate. Top with spring onion, coriander, pork, garlic, and red chilli — in that order — and serve.
