港式家常菜豆腐肉碎將醃好肉碎同蒜頭炒至金黃微焦,加滑豆腐同醬汁煮入味,後埋芡。
將豬肉洗乾淨,剁成肉碎。加入醃料醃半小時。
Wash the pork and mince it finely. Add the marinade ingredients and marinate for 30 minutes.
切好蔥蒜和豆腐備用。
Cut the spring onions, garlic, and tofu. Set aside.
下少許油,加入豬肉,炒至出油,加入蒜頭,翻炒至金黃微焦。
Add a little oil to the wok, add the minced pork and stir-fry until the fat renders out, add the garlic and stir-fry until golden and slightly charred.
加入混好的醬汁和豆腐,不要翻動,先煮幾分鐘,小心翻一翻豆腐,以免弄爛。試一下味道,再煮幾分鐘。
Add the mixed sauce and tofu. Do not stir immediately — let cook for a few minutes, then carefully turn the tofu to avoid breaking it. Taste the sauce, then cook for a few more minutes.
倒入已用水融好的粟粉水,輕輕攪匀,煮至理想的濃度稠度。灑上蔥花,加上少許麻油(可省略)
Pour in the cornstarch slurry (cornstarch dissolved in water), stir gently, and cook until the sauce reaches the desired consistency. Sprinkle with spring onions and a few drops of sesame oil (optional).
