蒜泥白肉將五花腩連薑及花椒煮熟切片,捲上萵筍絲,淋上蒜蓉辣椒油醬汁,麻辣惹味。
五花腩洗淨,放入滾水中汆水,撈起。
Wash the pork belly and blanch in boiling water, then remove.
萵筍去皮切絲,焯水後撈起。
Peel the celtuce, cut into thin strips, blanch briefly, then drain.
鑊內加水煮滾,下葱花、薑、鹽、花椒及五花腩,煮至肉熟透,撈起放涼,切片。
Bring water to the boil in a pot. Add spring onion, ginger, salt, Sichuan peppercorns, and the pork. Simmer until the pork is cooked through, then remove, cool, and slice thinly.
用五花腩片捲起萵筍絲成卷,排在碟中。
Roll the celtuce strips inside each slice of pork belly, then arrange on a plate.
將蒜蓉、醬汁、雞汁、辣椒油放入碗中,調成味汁,淋在碟上即成。
In a bowl, mix the minced garlic, soy sauce, concentrated chicken stock, and chilli oil into a dressing. Pour over the rolls and serve.
