Cold Noodle Sheets with Shredded Chicken pairs chilled liangpi with cucumber and chicken, dressed in sesame oil, chilli oil, and sesame seeds.
Blanch the cold noodle sheets in boiling water until just cooked. Drain, plate up, and let cool.

Wash the cucumber and cut into thin strips.

Shred the chicken breast into fine strips and arrange on the plate alongside the cucumber and noodle sheets.
將熟雞脯肉用手撕成細絲,與切好的黃瓜絲和放涼的涼皮一同擺入盤中。
Stir together the sesame oil, chilli oil, sesame seeds, and salt. Pour over the noodle sheets and serve.
取一個小碗,將香油、紅油、芝麻和鹽混合拌勻,再均勻地淋在盤中的雞絲涼皮上,即可。
