Lemon Orzo & Salmon pairs seared salmon with orzo simmered in chicken stock, preserved lemon, and cream, finished with parsley gremolata.
To prepare the gremolata: In a small bowl, combine the chopped parsley, the zest and juice from one Lemon, olive oil, salt, and pepper. Stir everything well to combine, then set it aside.

Cook the fish: Place a stainless steel pan over medium-high heat and let it heat up well. Once hot, add 2 tablespoons of neutral oil to the pan, then carefully place the seasoned fish, skin-side down, into it. Cook until it reaches your desired level of doneness. Remove the fish from the pan and let it rest.

For the orzo: Using the same pan, sauté the garlic, lemon zest, preserved lemon, and the medium onion in olive oil over medium heat until the onion is soft. Add the orzo and cover it with the chicken stock. Cook until the orzo is al dente.
珍珠麵:用同一個鍋,以橄欖油中火炒香蒜頭、檸檬皮屑和醃檸檬,直至洋蔥軟化。加入珍珠麵,倒入雞高湯。煮至彈牙(al dente)。
To finish the orzo, stir in a little heavy cream and the juice from the remaining lemon. Serve the cooked salmon over the orzo, and top with the made gremolata.
