Pork Siu Mai are open-topped dumplings of minced pork, water chestnuts and aromatics in wonton wrappers, steamed until just cooked.
Finely chop all the vegetables and aromatics. Mix all ingredients except the wonton wrappers together and let rest for 15 minutes.

Use a cutter about 8 cm in diameter to cut the wonton wrappers into circles. Or press a circle with a bowl and cut it out.

Place about 15g of filling in the centre of each wrapper. Wet the edges with water, fold them up and press tightly so they stick together.

This makes about 30 siu mai.

Place the siu mai on an oiled steamer or steam in a pot for about 5-7 minutes. Serve with soy sauce or chilli sauce.
