Steamed Egg with Shrimp and Tofu layers silken tofu and shelled shrimp into a smooth chicken-stock custard for a light, protein-rich dish.
Rinse the shrimp clean, then mix with white pepper and salt.
蝦洗乾淨後加入胡椒粉和鹽拌勻。
Cut the tofu into small cubes and place in a steaming dish.
豆腐切細粒,放入蒸碟中。
Beat the eggs with salt and water until even, strain the mixture into the dish, then arrange the shrimp on top.
雞蛋加入鹽和水攪拌均勻,蛋液過篩後倒入碟中,再鋪上蝦仁。
Cover with cling film and steam over medium heat for 10-12 minutes, then sprinkle with chopped spring onion.
封上保鮮紙後以中火蒸 10-12 分鐘,灑上葱花,即成。
