Stir-fried white shrimp meet crunchy mung bean sprouts and Chinese chives, seasoned with white pepper and a drizzle of sesame oil.
Wash the white shrimp clean, drain well, and set aside.
將白蝦清洗乾淨,瀝去多餘水分,再放在一旁備用。
Heat the wok and add oil. Stir-fry the spring onion and ginger until fragrant, then add the shrimp and stir-fry for 2–3 minutes until they change colour. Deglaze with the cooking wine.
燒熱炒鍋,倒入適量食用油。待油熱後,放入葱薑片煸炒出香味,接着倒入白蝦,翻炒2至3分鐘,直到蝦身變色。此時,沿鍋邊烹入料酒。
Add the mung bean sprouts and stir-fry for 1 minute until softened, then season with salt and white pepper.
放入銀芽,快速翻炒約1分鐘,待銀芽變軟後,調入鹽和胡椒粉。
Add the cut chives and stir-fry for about 10 seconds until fragrant, then turn off the heat. Toss through the chicken bouillon powder and sesame oil.
隨後加入切好的韭菜段,繼續翻炒約十幾秒鐘,直到韭菜散發出特有的香氣。立即關火,撒入雞精和香油,迅速翻拌均勻。
Transfer to a plate and serve.
即可盛盤享用。
