蒜蓉蒸茄子以蒜蓉、蠔油、生抽及辣椒調成醬汁,淋在嫩滑蒸茄子上,再灑蔥花添香。
將茄子切件,在茄子面上界上坑紋,放入白醋水浸 3 分鐘以防變黑。
Cut the eggplant into pieces and score the surface with shallow lines. Soak in white vinegar water for 3 minutes to prevent darkening.
混合蒜蓉、蔥、辣椒、蠔油、生抽、麻油、糖。
Mix the minced garlic, spring onion, chili, oyster sauce, light soy sauce, sesame oil and sugar.
茄子用中火蒸約 10 分鐘,淋上醬汁及蔥花,再蒸 3 分鐘。
Steam the eggplant over medium heat for about 10 minutes, pour over the sauce and spring onion, then steam for another 3 minutes.
