排南豬肉咖哩用排南咖哩醬及椰漿燜煮豬肉薄片,加入泰椒,最後灑上青檸葉絲提香。
洗淨豬肉,切薄片。
Wash the pork, then slice it thinly.
洗淨青檸葉,切細絲。去除辣椒蒂備用。
Rinse the kaffir lime leaves and slice them thinly. For the chilies, remove their stems and set them aside.
中火燒熱鑊,加入半罐椰漿,煮至油脂分離。加入咖哩醬爆香,放入豬肉炒至剛熟。倒入剩餘椰漿和水,收汁至醬汁變稠油脂浮面。加入辣椒煮至微軟。
Heat a pan over medium heat. Add half of the coconut milk and cook it until the oil starts to separate. Stir in the curry paste and continue cooking until it becomes fragrant. Add the pork and stir-fry it until it's just cooked through. Pour in the remaining coconut milk along with the water. Let the mixture simmer until the sauce thickens and the oil rises to the surface. Add the chilies and cook them until they are just softened.
熄火,灑上切細的青檸葉,上碟即可。
Remove the pan from the heat. Sprinkle the thinly sliced kaffir lime leaves over the curry, then serve it on a plate.
