打拋豬以搗碎泰椒及蒜頭爆炒豬絞肉和腸仔,最後拌入一把香濃打拋葉,惹味下飯。
將辣椒同蒜頭一齊搗碎至幼滑,然後備用。
Pound the fresh and dried chilies along with the garlic until they are finely crushed. Set this mixture aside.
洗淨打拋葉並摘好,備用。
Wash the holy basil leaves well and pick them from their stems. Set these aside as well.
將腸仔斜切成片。
Slice the sausages diagonally.
用中火燒熱平底鑊。加入搗碎嘅辣椒蒜頭,炒香。放入豬絞肉炒至差不多熟透,再加入腸仔。轉細火。
Heat a pan over medium heat. Once warm, add the pounded chili and garlic mixture and stir-fry until it becomes fragrant. Add the ground pork and continue to stir-fry until it's nearly cooked through. At this point, add the sliced sausages. Reduce the heat.
加入蠔油、生抽豉油、砂糖、魚露同少許老抽豉油調味。加入少量清水。轉大火,炒至所有材料熟透、混合均勻。試味後按需要調整。
Season the mixture with oyster sauce, light soy sauce, sugar, fish sauce, and a splash of dark soy sauce. Add a small amount of water. Increase the heat and stir-fry everything until it's fully cooked and well combined. Make sure to taste and adjust the seasoning to your preference.
加入打拋葉,拌勻後即熄火。
Add the holy basil leaves, toss them to combine with the other ingredients, and then turn off the heat.
上桌享用。
Serve immediately.
