照燒雞肉蛋黃醬飯糰將雞胸肉以豉油、味醂同蜜糖煮至收汁撕碎,連蛋黃醬包入飯糰。
將雞胸肉切細粒放入煲中。加入足夠水蓋過雞肉。加入所有●號材料(豉油、味醂、清酒、砂糖、蜜糖、薑),中火煮。煮滾後轉細火慢煮至汁液差唔多收乾。撈走面層嘅浮沫。
First, cut the chicken breast into small pieces and place them into a pot. Add enough water to cover the chicken. Add all the seasoning ingredients: soy sauce, mirin, sake, sugar, honey, and ginger. Cook this mixture over medium heat. Once it comes to a boil, reduce the heat and let it simmer until most of the liquid has evaporated. As it cooks, make sure to skim off any foam that rises to the surface.
當汁液差唔多收乾時,開始一邊慢煮一邊撕碎雞肉。(煮熟嗰陣更容易撕)我用湯匙,你可以用任何你覺得好用嘅方法。
When the liquid has mostly cooked off, begin shredding the chicken while it's still simmering. (It gets easier to shred as it continues to cook down.) I personally use a spoon for this, but feel free to use any method you find easiest.
用保鮮膜鋪好小碗,加入一層白飯。喺中間做一個小凹位放餡料。加入少少蛋黃醬,然後放些雞肉,再加一層蛋黃醬喺面頂。
Line a small bowl with plastic wrap. First, add a layer of rice, then make a small indentation in the center to hold the filling. Place a little mayonnaise in the indentation, followed by some of the shredded chicken, and then another dollop of mayonnaise on top.
用更多白飯蓋住餡料,然後用保鮮膜將飯糰整成圓形。(你可以唔用保鮮膜,但用咗方便清潔,而且可以將飯糰包好方便攜帶。)
Cover the filling with more rice. Using the plastic wrap, gently shape the rice into a round ball. (While you can certainly do this without plastic wrap, using it makes cleanup much simpler and allows you to keep the rice balls individually wrapped for easy handling and storage.)

This is how they look on the inside. These rice balls are delicious served cold, but they're also fantastic when warmed up slightly in the microwave!
