Bitter Melon, Soybean, and Pork Rib Clay Pot simmers blanched ribs and soybeans in stock, then adds bitter melon for a savoury Cantonese pot.
Chop the pork ribs into small pieces. Halve the bitter melon, remove the seeds and white pith, and cut into diamond pieces. Rinse the soybeans clean.
將排骨斬成小段。涼瓜對半切開後,去除瓜瓤,再切成菱形塊。黃豆則清洗乾淨備用。
Blanch the pork ribs and soybeans.
將排骨和黃豆分別放入沸水中焯水。
Blanch the bitter melon.
隨後,將涼瓜也放入沸水中焯一下水。
Heat oil in the pot, stir-fry the spring onion and ginger until aromatic, then pour in the stock. Add the pork ribs and soybeans and simmer for 10 minutes.
在鍋中倒入適量植物油燒熱,放入葱段和薑片爆香。接着倒入高湯,再放入焯過水的排骨和黃豆,蓋上鍋蓋燉煮10分鐘。
Add the bitter melon and simmer briefly, then season with the remaining ingredients and simmer until everything is cooked through. Serve.
待排骨和黃豆燉煮10分鐘後,加入焯水後的涼瓜,繼續燉煮片刻。最後,根據個人口味加入鹽、糖、味精、雞粉和胡椒粉進行調味,待所有食材燉煮至軟爛入味即可。
