Bunny Steamed Buns shape soft white and red-yeast dough into rabbits with pointed ears, steamed fluffy and finished with chocolate faces.
Weigh out the plain flour, water, yeast and caster sugar and put them into the stand mixer bowl.
把普通麪粉、清水、酵母和白砂糖分別稱好,放入廚師機攪拌桶中。
Fit the bowl onto the stand mixer, attach the dough hook, lower the head until it clicks into place, then plug it in.
把攪拌桶裝上廚師機,扣好搓麪鈎,放下機頭至聽到「咔嗒」一聲鎖緊,然後接通電源。
Start the mixer on speed 1, low, to combine the ingredients evenly.
啟動廚師機,先用1檔低速把食材攪勻。
Then switch to speed 3, high, to keep kneading the dough.
再轉3檔高速繼續攪拌麪糰。
After about 5 minutes on high, the dough becomes very soft and smooth.
高速搓約5分鐘,麪糰已變得特別柔軟光滑。
Take the kneaded dough out of the bowl and roll it round by hand.
從攪拌桶取出揉好的麪糰,用手滾圓。
Divide the dough into two, keeping about 450g white and kneading a little red yeast rice powder into the other 260g to make it red.
把麪糰分成兩份,一份約450克為白麪糰,另一份約260克加入少許紅曲粉揉成紅色麪糰。
Divide each colour of dough evenly into 15 small pieces and roll them round.
把兩種顏色的麪糰各自平均分成15份,逐一滾圓。
Take a white piece and roll it into a tongue shape with a rolling pin.
取一份白色小麪糰,用擀麪杖擀成舌形。
Take a red piece and roll it into a tongue shape too, keeping it slightly smaller than the white one.
再取一份紅色小麪糰,同樣擀成舌形,紅色的建議擀得比白色小一圈。
Lay the red sheet on top of the white one and roll gently a few times so the two colours bond.
把紅色麪皮疊在白色麪皮上,用擀麪杖輕輕擀幾下,使兩色麪皮貼合。
Cut down the middle with a knife, leaving the top quarter uncut.
用刀從中間對半切開,頂端留約四分一不要切斷。
Roll the sheet up from the bottom.
把麪皮由下往上捲起。
As you near the top, leave a section for the ears, then fold it back on itself.
快捲到頂時預留耳朵部分,然後向後對摺。
Pinch it firmly at the back.
背面用手捏緊。
Press the middle of the ears with a toothpick and shape them a little.
用牙籤在耳朵中間輕壓一下,稍作整形。
Place the shaped buns on a steamer rack lined with parchment to prove.
做好後放在墊了牛油紙的蒸籠格上發酵。
Once doubled in size, steam from cold water for about 15 minutes, then turn off the heat and leave to rest for about 3 minutes before removing.
發酵至約兩倍大後冷水上鍋,蒸約15分鐘熄火,焗約3分鐘才揭蓋出爐。
Once out of the steamer, draw the faces with melted chocolate.
出爐後用融化的朱古力畫上表情。
