Chicken katsu donburi simmers crisp cutlet with onion, carrot, and pepper in a dashi-soy broth, bound with just-set egg over rice.
Prepare a large piece of chicken katsu; you can either purchase it from a store deli or make your own.

Carefully place the chicken katsu into the pan. After the katsu has absorbed some of the broth, pour in the beaten eggs. Cover the pan with a lid and continue cooking until the eggs are just set. Turn off the heat and serve the donburi using a spatula.
