HK Steamed Chicken with Dried Mushrooms marinates chicken thigh in soy, wine and sesame oil, then steams it with shiitake and ginger until tender.
Cut the chicken into small pieces and marinate with the marinade ingredients for 30 minutes.
將雞肉切成適口的小塊,再加入所有醃料,充分拌勻後醃製約三十分鐘。
Soak the dried mushrooms in advance until soft. Remove the stems and slice. Julienne the ginger slices.
冬菇需要提前用水浸泡至軟,接著去除蒂部,再切成片狀。薑片則切成細絲備用。

將醃好的雞肉、冬菇片和薑絲等所有材料混合均勻,平鋪在碟子上。待蒸鍋中的水燒開後,放入碟子,用大火蒸煮約十分鐘即可。

在蒸好的雞肉上撒上少許蔥花,即可。
