HK-Style Wife Cake wraps a flaky water-and-oil pastry around a chewy filling of winter melon candy and glutinous rice flour, baked golden.
Make the pastry first. Rub 9 g flour and 5 g butter together to form the oil pastry. Mix flour and water to form the water pastry — adjust water amount by feel, but not too hard or soft. Cover with cling film and rest for 1 hour.
製作餅皮。將9克麵粉和5克奶油混合搓揉成油酥。將10克麵粉與適量的水混合搓揉成水皮,水量以用手捏起來感覺軟硬適中為宜,不要過硬或過軟。將兩種麵團分別蓋上保鮮膜,靜置一小時。
While waiting, make the filling. In a small pot, add the winter melon candy, mirin lees, butter, flour and water, stir and heat gently until the glutinous rice flour becomes smooth. Turn out onto non-stick paper and let cool.
在等待麵團鬆弛的同時,可以開始製作內餡。取一個小鍋,將切末的冬瓜糖、味醂粕(或砂糖)、奶油、糯米粉和水一同放入,拌勻。用小火邊加熱邊攪拌,直到糯米粉糊變得光滑即可。隨後將內餡倒在不沾紙上,放涼備用。
Wrap the oil pastry inside the water pastry, flatten and roll to about 12 cm, then roll up. Place seam-side down, cover with cling film and rest for 30 minutes.
將水皮擀開,把油酥包入水皮中,再輕輕壓桿成長約12厘米的長條,再捲起來。收口朝下放置,蓋上保鮮膜,靜置30分鐘。
Rotate 90 degrees, roll to about 20 cm again and roll up. Place seam-side down, cover and rest for another 30 minutes.
將麵團轉90度,再次擀成長約20厘米的長條,再捲起來。同樣收口朝下放置,蓋上保鮮膜,靜置30分鐘。
Gently flatten and roll step 4 into a circle about 10 cm in diameter. Wrap around the filling and seal, then flatten and poke holes with a fork. Place on a baking tray lined with non-stick paper.
取出步驟4的麵團,稍微壓桿成直徑約10厘米的圓形。將放涼的內餡包入麵皮中,捏緊收口,再輕輕壓扁。用叉子在餅皮表面戳幾個小洞,最後將餅放在鋪有不沾烘焙紙的烤盤上。
Bake in a preheated 190°C oven for 13 minutes, reduce to 180°C and bake for 3 more minutes, then turn off the oven and rest for 10 minutes.
將烤盤放入已預熱至190度的烤箱中,烘烤13分鐘。接著將烤箱溫度調降至180度,繼續烘烤3分鐘。關閉烤箱電源後,讓老婆餅在烤箱內靜置10分鐘即可取出。 贴士 港式老婆餅的內餡最大的特色就是加入了冬瓜糖。這不僅為餅帶來了獨特的口感,也增添了與眾不同的風味,與台式老婆餅的滋味截然不同,別有一番風味。如果自己在家製作,可以適量減少糖的用量,使用奶油製作,甜度會剛剛好。成品奶香濃郁,酥脆可口,令人回味無窮。
