Mini Zucchini and Feta Quiches fill puff-pastry shells with sautéed zucchini in an egg-cream custard, each topped with a cube of feta.
Preheat your oven to 400°F (200°C). Wash, peel, and dice the zucchini. Sauté the diced zucchini in a small amount of oil, then season them with salt, pepper, and Herbes de Provence. Continue to cook for about 20 minutes.

While the zucchini are cooking, whisk together the eggs and heavy cream in a separate bowl.
