Cut the radicchio leaves into thin strips. Wash them well and gently squeeze out any excess water.

In a mixing bowl, combine the heavy cream, egg, a pinch of salt, the sautéed radicchio, and the ham. Stir all these ingredients together well with a spoon.

Unroll the puff pastry and carefully place it into the baking pan that you've lined with parchment paper. Use a fork to gently prick holes across the bottom of the pastry.

Pour the radicchio, cream, and ham mixture into the pastry shell. Afterward, scatter pieces of gorgonzola cheese evenly over the top.

Fold the edges of the puff pastry inward to create a crust. Bake the tart in a preheated oven at 375°F (190°C) for about 30 to 35 minutes.
