Ratatouille sautes zucchini, eggplant, peppers and onion, then simmers them in tomato with garlic and a bouquet garni until tender.

Heat olive oil in a large pot. Add the onions, garlic, and bell peppers, then sauté them until they've softened.

Stir in the zucchini and sauté for a bit longer.

Now, add the peeled tomatoes, salt, pepper, sweet paprika, and mild chili powder. Add a little sugar to help balance the acidity from the tomatoes.

Add the tomato puree and the bouquet garni. Let everything cook together for about 12 minutes.
