Roasted Salmon Glazed with Brown Sugar and Mustard coats fillets in coarse Dijon and brown sugar, then roasts and broils them to a sweet-spicy finish.
If time allows, soak the salmon fillets overnight in the refrigerator in salted water with ice cubes. When you're ready to cook, be sure to well pat the fillets dry with paper towels.
