Slow Cooker BBQ Pork Chops braise tender in root beer, BBQ sauce and Worcestershire, then the juices are thickened into a glossy sauce to pour over.
First, season your pork chops with your preferred blend of spices (for example, salt, pepper, garlic powder, and a little steak seasoning blend work nicely). Transfer the seasoned chops to a greased slow cooker, then scatter the thinly sliced onions over them. In a separate bowl, whisk together the root beer, BBQ sauce, Worcestershire sauce, and minced garlic. Pour this sauce mixture evenly over the pork chops. Secure the lid on the slow cooker and set it to low. Allow the pork chops to cook for 4 hours; if you're using thicker cuts, they might need a bit longer.

Once the 4 hours of cooking time has passed, carefully transfer the sauce from the slow cooker into a saucepan. In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Stir this cornstarch slurry into the sauce in the saucepan. Place the saucepan over medium-high heat and bring the sauce to a simmer; it should thicken quite quickly. Serve the pork chops with the thickened sauce generously poured over them.
